Cooking in Cardinal Cottage

Seven students cooked and ate a delicious vegetarian meal in the kitchen of Cardinal Cottage on Grier campus organized by members of Sustainable Sisters. The club is dedicated to broadening understanding of climate change, environmental issues, and sustainability.
Grace, Sophia, Nicole, Annie, Petra, JoJo, and Hannah joined Mrs. Forest in the community kitchen of Cardinal Cottage. They prepared black bean and sweet potato burritos and rice with poblano peppers.

Sustainable Sisters reminds us to consider eating more plant-based meals to reduce human impact on the Earth. Animal-based diets have high environmental costs to the planet, including harm to land, water, and air. Additionally, plant-based meals can provide consumers with additional nutrients and help in lowering rates of chronic disease. 

Yours truly enjoys preparing vegetarian meals as well. If you’d like to try something similar to what the Sustainable Sisters created, try this recipe for black bean and sweet potato burritos. 


Easy Vegan Black Bean & Sweet Potato Burritos

Makes 4 burritos

  • 2 tsp. vegetable oil 
  • 1 large sweet potato, peeled and grated
  • 1 can black beans, drained and rinsed
  • salt & pepper
  • 2 tsp smoked paprika OR 1 tsp chipotle powder (if you want it spicy!)
  • 4 flour tortillas 
  • ½ c. fresh cilantro, chopped
  • Optional: ½ c. vegan sour cream
Rinse, peel, and grate the sweet potato with large holes of a box grater. Chop up any bits too small to grate. 
 
Heat a non-stick pan on medium. Add vegetable oil. When oil is hot, add grated sweet potato. Mix in spices. Cook potatoes for about 3 minutes. Then, add drained black beans. Cook for 5 minutes more, stirring occasionally, until warmed through. Remove from heat. Mix in the cilantro. 

Divide filling among four tortillas. (Most commercially prepared tortillas are vegan, but you can check the ingredients on the packaging to make sure.) Wrap tortillas burrito-style around the filling. To balance the spice, you can serve it with vegan sour cream!

Feel free to vary this recipe by using different seasonings, such as chili powder and cumin instead of paprika.  If you're not strictly vegan, you can use regular dairy sour cream instead of the vegan alternative.
